Banana Chocolate Chip Muffins



What You’ll Need:

1 ¾ Cup Flour

½ Cup White Sugar

1 Tbsp Baking Powder

½ Tsp Salt

½ Cup Chocolate Chips (I like milk)

1 Egg

¼ Cup Vegetable Oil

¼ Cup Milk

1 Cup Mashed Bananas (about 2 or 3 usually does the trick!)




What To Do:

  • Preheat oven 400 Degrees
  • Mash banana, add egg, oil and sugar.
  • In separate bowl, mix flour and baking powder.
  • Add dry ingredients into wet ingredients, mixing well.
  • gradually add in milk.
  • Fold in chocolate chips and transfer to muffin cups.
  • Bake for 20-25 minutes and cool!

TIP: These are both freezer friendly and mini muffin-able 😉!


Very Berry French Toast Bake!

Ah, early mornings. How I cherish them (or try to anyways). This morning the kids and I got up and put together a French toast bake in the Cast Iron Skillet I received for Christmas (shout out to the Fiancé for a very thoughtful gift). It was easy to make but loooong to bake. So I would say it’s more of a weekend thing than a school day breakfast but when the motivation struck me…I had to act on it! 

Very Berry French Toast Bake!

What you’re going to need: 

5 Eggs

10 pieces of bread, cubed

2.5 cups milk (we like whole)

.5 cup water

3 tbsp maple syrup (or honey!)

2 tsp cinnamon 

2 tsp vanilla

.5 tsp salt


Step 1

Cut up all of that bread. There is a lot of it so it might not all fit in, if it won’t, hang onto it until we’ve gotten to the soaking!

Step 2

Mix together your eggs, milk, water, maple syrup, spices and vanilla. Whisk until mixed and pour over the bread. 
Let this soak for 20 minutes (10 minutes in is a good time to try to squeeze in some more bread if you didn’t just toss it out like I did). 

Step 3

Make it beautiful. Use frozen berries to decorate your masterpiece and toss it into the oven for 60 minutes at 350•!

Step 4

Drizzle with syrup (or honey) and devour that beast. 🤷🏻‍♀️😍
